Fassbind Les Vieilles Barriques Vieille Cerise is a Swiss aged cherry brandy made from fully ripe cherries grown in the Rigi region of Switzerland, named after the majestic Rigi mountain. The Vieilles Barriques program rests the distillate in stainless steel tanks for at least 2 years, then ages it in oak barrels for an additional 14–18 months. Fassbind’s house-made Bonificateur is added at the finish to enhance fruity sweetness and produce a smooth, refined aged character.
The combination of long stainless-steel resting, oak barrel aging, and the proprietary Bonificateur step produces a cherry brandy with a depth and rounded character that fresh, young eaux-de-vie cannot achieve. Fassbind’s 1846-founded heritage drives the precision required to balance the dual aging phases without losing the underlying fruit character.
